Overview
In 1878, the Scottish writer Stevenson travelled through the Cévennes with his donkey Modestine, whose travel diary he published. Our Cévennes Ardéchois terroirs pay tribute to him through this cuvée.

Vineyard

The vineyard is located in the south-west of the southern Ardèche and is planted in faÿsses (Cévennes terraces) on acid sandstone soils at an altitude of 300m.

Winemaking

The vinification is done according to the “Beaujolais technique” in carbonic maceration. With a short vatting period of 6 days and a fermentation at 18°C.

Tasting Notes

Its cherry red colour and fruity nose remind us of banana and candy. Aromas of redcurrant can be felt. It is a supple and fruity wine, without tannin.

Food and Wine Pairing

It is a perfect accompaniment to mixed salads, cold meats, and pizzas.

Best served at 14°C.
