It is a variety traditionally used in Bordeaux, its qualities allowed it to win the South of France. It offers a beautiful tannic structure with a lot of roundness and flexibility.

Vineyard

The vineyard is situated on the southeast side of the southern part of Ardèche. It is grown outside of dry areas on gentle slopes made up of chalky-clay soils. The climate is typically Mediterranean.

Winemaking

This wine is made according to traditional methods, at a controlled temperature (25°C). Its period in vats lasts 8 to 10 days.

Tasting Notes

It is a deep red ruby color with a nose evoking fruity aromas: black currant and prunes. The palate is ample and also fruit-flavored. This is a wine with matter and good length. Its tannins are firm, but melted.

Food and Wine Pairing

This offering is perfectly suited to savory tarts or cakes, as well as cheese soufflés. It goes well with red meat, either grilled or served with gravy, as well as hard cheese like comté.

Best served at 15-16°C.
